Effortless control between -20 °C and +15 °C

The MIWE GUV proofing interruption unit gives you full control of lower temperatures above freezing, temperatures below freezing and even deep-freeze temperatures (-20 °C to +15 °C). In this way, it covers all tasks from retarded proofing and long-process proofing methods to quick cooling and proofing interruption. It can be used for all applications where a wide spectrum of refrigeration is needed, but no higher proofing temperatures are required (or are provided by a separate system). Also ideal as a thawing and recovery cell.

Wide range of use options

The MIWE GUV allows you to retard proofing, quick cool products, interrupt proofing or harden goods. That means, it can automatically run through all refrigeration processes required for modern long-process proofing and freezing. Of course, it can do so in any order and in freely configurable time segments.

Technologically sophisticated

The integrated fan control that can be regulated individually for every process step improves enzymatic development of your dough pieces – for better flavour and more volume. The generously dimensioned freezing capacity freezes your baked goods rapidly and gently. The naturally high (passive) relative humidity of the MIWE GUV can be increased effectively with the (optional) humidifier (to 95% rel. humidity).

Ready for the future today

With its modern touch control system MIWE TC, you can conveniently define up to eight process steps and access them reliably with the MIWE GUV. That makes even complex process sequences easy to manage. It is also network capable, so that you can remotely monitor, store and manage all process data if necessary.

Hygienically impressive

The interior fittings and the slip-proof base pan are optionally available in easy-to-clean and hygienic stainless steel. Stainless steel versions of the standard white coated fronts are also available.

Role model for energy

The intrinsically universal 80 mm thick continuous insulation prevents cold bridges and loss of energy. Even more economical: the (optional) equipment with 100 mm thick insulation.
