Discover what shapes today’s baking craft

MIWE expo 2025 is a space for open exchange and professional insight. At our MIWE live baking centre, experienced bakers and technical specialists share practical approaches to the evolving challenges of modern quality baking – hands-on, transparent and on equal footing.

This year’s international edition – the European Bread Summit – brings together eight outstanding bakers from eight countries. Each presents a national bread speciality live on site, offering a rare opportunity to observe authentic techniques, compare approaches, and explore the diversity of European baking culture in practice.

The event is designed to inspire – not through lectures, but through visible craft, direct dialogue, and shared reflection on what makes good baking even better.

At the heart of the European Bread Summit, four baking experts from different countries take to the stage at once – each presenting their own national bread speciality, from dough preparation to the final bake in various MIWE ovens. A MIWE specialist moderates the sessions and provides professional insight and opportunity for direct exchange.

In parallel to the live baking sessions, the seminar room offers brief impulse talks by each of the international bread experts. These talks explore a wide range of themes – from national baking philosophies to shared challenges in the profession. The format encourages open discussion, exchange of perspectives and a deeper understanding of Europe’s diverse baking cultures.
