Steam input with spraying technology; optional steam optimisation ensures even greater volume and an even shinier crust, especially for products which require intensive steam.
The crust and bloom you desire thanks to two reversed circulating fans with four optional adjustable fan speeds; the automatic stop of the fans near the end of the baking program keeps the heat in the oven and thus saves energy.
For specific products (e.g. pretzels) and especially good crust formation at the end of baking: the freely controllable optional electric de-steaming flap.

If you would like a fully automatic cleaning system for your in-store baking oven whilst also benefiting from energy-efficient, ecological and time-saving advantages, then look no further than Version 3.0 of MIWE cleaning control. It requires considerably less water and also uses less energy. In addition, it uses a food-safe, risk-free cleaning agent. It also has an automatic fill level display, and an auto-start function for cleaning outside of normal business hours. The cleaning tank is designed to be filled for several cleaning cycles, which can be done simply via the front panel.
