Gulfood 2010

After the successful presence at the trade fairs in the last two yeas, the German company MIWE will present again in 2010, because the MIWE-team consider the Gulfood in Dubai to be the most important trade fair in the gulf region. Therewith MIWE ties in with the positive interest from 2009 and forecast a big potential in the gulf region for this trade fair and the coming season.

"We welcome existing clients on our booth and hope to gain of course new costumers with our attractive range of baking stations to production baking ovens and bakery refrigeration up to automation technology", summarizes Charlotte Steinheuer, MIWE, the expectations.

Rack ovens MIWE roll-in
MIWE roll-in has been convincing bakers for more than 40 years. During this time, over 10.000 units were already sold throughout the world. Long lifetimes and high reliability due tfo excellent materials with many detail solutions, ideal baking with low energy consumption thanks to the MIWE aircontrol and, last but not least, perfect control with clearly structured operation through the Touch Control MIWE TC have carried the tried and tested product MIWE roll-in into the new millennium.

Baking stations still extremely popular in the Middle East
MIWE once invented in-store baking - originally called "sight-and-smell" baking - which now is very popular among bakers worldwide. The development is long from having reached its end. Eating outside the home and, along with this, the different types of snack shop concepts continue to show development potential, while bakers still see baking stations as valuable tools for emphasizing their promise of freshness. With a wide variety of baking ovens and baking stations, MIWE offers the right instruments for all kinds of baking tasks in a customer environment and supports individual requirements from the market with its new developments.

In the future, MIWE econo will also be available as a true double-circuit system: the control systems are accommodated together in a head piece so that the baking oven offers more flexibility and capacity in a lower overall height.

MIWE engineers have given MIWE aero, the classic among the efficient in-store baking ovens, a new cleaning system that still has the same name as before ("cleaning control"), but now uses cleaning and declaiming tabs. Handling is easier, the tabs are freely available on the market as standard products, and cleaning costs and water consumption have been lowered.

MIWE condo can be used versatility. In the future, the small deck baking oven with great output will be available in black and with longitudinal thrust. What's new in the condo environment is the MIWE GVAU automatic proofing machine for lower cabinet installation, which brings additional flexibility to baking: during the day, it can be used as a proofing cabinet while storing frozen goods at night. The user just defines an end time and the control system automatically calculates the necessary starting time for the thawing and proofing process so that baking can start immediately early in the morning and additional spatial requirement for an additional refrigerator is created.

The MIWE cube:air, the convection baking oven from the Fresh Food System of MIWE, now for 5 and 10 baking trays, was developed as a reaction to a requirement from the French market. In addition to the MIWE cube:stone stone plate oven, MIWE cube:fire is now available as a specialist for all products that are baked without steam and that profit from higher temperatures (top and bottom heat can be regulated separately) like pizzas, snacks, tarte flambée, and soft pretzels, which require a particularly short baking time and high temperatures up to 350°C.

Experience bakery refrigeration
MIWE offers in cooperation with the new partner BakingTM Technologies the complete range of bakery refrigeration units from the tried and tested fully automatic proofing unit MIWE GVA over fully automated proofing and freezing lines all the way to the corresponding modules for in-store baking, and is therefore comprehensive partner for all air-conditioning tasks of bakeries and their smooth running. At the trade fair stand the specialist consultants from MIWE and BakingTM Technologies can give advice to interested visitors about the units and the custom-tailored refrigerating solutions.

Automatization as a priority
The deck baking oven MIWE ideal with 6 hearths, 1.80 m wide and 2 m deep, is especially interesting for large bakeries. In this case, the loading is best automatically carried out by means of the loading system MIWE athlet. In addition, MIWE has a broad technology in its portfolio concerning the automatization of the baking processes - transport equipment, interface solutions and loading technology -, which rounds off the whole production process in the bakeries.
